Indonesian PicklesIngredients:
4 green cucumbers
1 tbsp salt
12 small red onions or white pickling onions
6 green chilies
¼ cup white vinegar
3 tbsp sugar
Directions:
1. Wash cucumbers and remove most of green skin and cut into strips or cubes. Place in a bowl and sprinkle with salt. Allow to stand for 20 minutes.
2. Peel onions and put in small saucepan with vinegar sugar. Bring to boil then add cucumber and chilies. Bring to boil again then turn off the heat.
3. Allow to cool and bottle in sterilized jar for 10 days. The pickles will keep for three months.
