Ayam garo Rica

Ayam Garo Rica

Ingredients
500 gr breast fillet chicken
1/2 cup lemon basil (or you can use thai basil)
10 kaffir lime leaves, torn
3 pandan leaves, sliced thinly
4 spring onions, sliced thinly
2 turmeric leaves, sliced thinly
2 lemon grass sticks, smashed (use the white part only)
2 tbsp lime juice
1 tsp salt
1/2 tsp sugar
3 tbsp vegetable oil

Blend/Process
10 shallots (or 1 red onion)
10 long red chilies
10 thai red chillies
3 cm peeled ginger
1/2 tsp salt

Directions :
1. Put chicken in medium bowl, drizzle with lime juice and salt over chicken, put it in a fridge for 15minutes
2. Heat oil in a wok, stir fry the paste until fragrant
3. Add chicken, lemon grass and all leaves, stir well
4. Put the lid on and cook chicken until just tender and cooked through
5. With the lid off, simmer chicken until the juice reduced
6. Add salt and sugar, stir well
7. Add basil and spring onion, cook until the juice is thicken slightly
8. Remove from heat, stir in lime juice
9. Serve with steamed rice.
