Ingredients :
500 gr chicken livers
500 gr chicken giblets
1 big tomato, diced
2 bay leaves
2 cm galangal, smashed
1/2 tsp white sugar
1 tsp salt
cooking oil
Paste:
8 Asian shallots or 1/2 big red onion
5 big red chillies
Directions:
1. Cook liver and giblet until tender, drain, pat dry with paper towel, halved
2. Fry liver and chicken until golden brown, set aside
3. Heat oil in wok over medium heat, stir fryipaste until fragrant
4. Add diced tomatoes, galangal and bay leaves, cook until tomato become smooth paste
5. Add livers, giblets, salt and sugar, adjust the taste
6. Stir fry for another 5 minutes, remove from heat
7. Ready to serve.
